This recipe is one of my favourites, and I go back to it every few months. Nothing is better than a banana chocolate chip muffin and a cup of coffee on a chilly morning!
- 1 cup flour (I use whole wheat)
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1 cup mashed bananas
- 1/4 cup sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1/4 cup applesauce
- 1/4 cup chocolate chips (or whatever makes you happy)
Preheat oven to 350 degrees. Grease muffin pan or line with paper liners.
In medium bowl, combine flour, baking powder, baking soda and salt together.
In a separate bowl, combine banana, egg, sugar and vanilla extract. Stir. Add applesauce. Slowly combine banana mixture to flour mixture. Blend well, and then fold in chocolate chips.
Scoop batter into prepared muffin cups. Bake 15-20 minutes, or until a toothpick comes out clean. Let cool in pan for five minutes, then transfer to wire cooling rack.
